A quick nod to two solid foodways publications from University of North Carolina Press.
Matzoh Ball Gumbowas first published in 2005 (and is set for a paper back release this summer). The book presents the unique problems facing southern Jews as they adopt and avoid traditional local delicacies. Needing to crop out pork and shellfish, the Jewish community found inventive solutions and formed their own redefined food traditions.
For the home cook, Sweet Carolina: Favorite Desserts and Candies from the Old North State (published in October 2009) collects a range of confections. Foy Allen Edelman produced the book the old fashioned way, traveling throughout her home state and building a catalog of recipes over a 60 year period. As result, she manages to preserve some of the grad traditions of Piedmont sweets.
Both books make superb editions to any chef or foodie library.
