Here is a sexy salad that takes 10 minutes to make. What makes a salad sexy? It is a subjective matter, but we give allure to our greens with color contrast—meeting those ends here with some sliced strawberry and goat cheese crumbles at the ends of the spectrum and pickled red onions merrily in between. It is that easy.

Ingredients:

Salad:
3 c organic baby spring salad mix
1/2 c fresh strawberries, thinly sliced
1/2 c sugar snap peas
1/4 c pickled red onions
1/4 c goat cheese

Dressing:
1 Tbsp ume plum vinegar
1 Tbsp white miso paste
1/4 c olive oil
Juice of 2 lemons

Method:
Mason jars are an easier way than whisking to emulsify the oil in your vinaigrette—especially when using miso, which gloms on to the strands of a whisk in ill-looking clumps. Save the heartache and throw all of the dressing ingredients into a mason jar, close the lid and shake it like mad until the song is over.

While the dressing settles for five minutes in the jar, fill a salad bowl with the salad mix. Make sure the strawberries smell like strawberries, slice them and throw them in with the greens. Wash the sugar snap peas, and trim the ends if you like; into the bowl. We like to toss this stuff up a bit before laying a bed of pickled red onions on top. Make that bed with pillows of goat cheese. Let the afterglow hang on the sexy salad until ready to serve.

Shake the jar a little more before tossing the salad and serving.
