Recipe | Spiced Seared Tofu

We are generally unimpressed by macho posturing when it comes to health food and tofu is usually the prime target for such bellowing. “Okay, look, I know what you’re thinking. Tofu?” Paul Kita of Men’s Health posts. “Tofu? Hippie-fueling, vegan-happy, meat-wannabe, totally tasteless tofu?” Despite the popularity of Mad Men, it is not 1965, and tofu is a pretty regular-ass thing to eat. Which is why we are passing along this recipe from Chef/Co-Owner Rich Landau of Vedge in Philadelphia.

Ingredients:
1 package extra-firm tofu
1 Tbsp Kosher salt
2 Tbsp peppercorns
1 tsp coriander seeds
1 tsp caraway seeds
1 tsp fennel seeds
1 tsp cumin seeds
1 tsp celery seeds
Olive oil
