Our own experiments brewing beer with coffee have not been the most favorable. We are pretty sure the trick is adding some coffee grounds to the wort as it is cooling, so that it doesn’t steep in boiling water and become bitter. Have not gotten around to trying this method yet, but if we had to guess, we would say that Santa Fe Brewing Company has latched on to a similar approach for their Imperial Java Stout. Not only is it not bitter, it is actually kind of sweet—almost like a coffee liqueur. The beer is strong (8-percent ABV) in the opposite direction of coffee. Pace yourself (we forgot to, even though the cans have clever reminders).
