In 2009, a collection of the world’s greatest  chefs came together for a climate chaneg summit of sorts in Copenhagen. This first collective “Raw” dinner presented a challenge to those in attendance to think about sustainability through foods and philosophies on cooking while remaining as creative as possible.

The book, Cook it Raw, is a document of this dinner and others that followed which brought these chefs together to explore ideas of cultural and social change through food and cooking. “Cook it Raw tells the story of an exciting collection of avant garde chefs who come together to create unique dining experiences that explore and question social, cultural and environmental issues.”
