One more (slightly) esoteric food ways history for the year. Crunch! Crunch! A History Of The Great American Potato Chip  traces the potato chip from 19th century kitchens to corporate structure. The books author is Dirk Burhans, a trained biologist who also seems to know a good bit about soda pop. Included within the pages of Crunch! is an additional collection of potato chip ephemera — perhaps the most exciting prospect. While a book on tortilla chips (the wonderful base of a wonderful dish, nachos) would have been more useful, Crunch! nicely complements the books about bagels and donuts already covered here in 2008.
