There once was a man from Nantucket… who made the insane decision to distill single malt whiskey.

“Notch, as in “not Scotch, but rather single malt whisky from Nantucket,” is a new world whisky distilled from pure island glacial water. Cisco Brewers develops the whisky wash by producing a young beer made from Maris Otter malt; the wash is then transferred to the Triple Eight Distillery, where the alcohol is heated in a small copper pot still. The heart of this pure distillate is captured and racked in ex-bourbon barrels from the makers of Jim Beam, Jack Daniels, Woodford Reserve and Buffalo Trace. The fresh distillate is then laid to rest in the bonded warehouse for 8 years.”

Their latest is a profile on Japan’s first distillery, Yamazaki. “Tourists to Japan expect to drink two things: sake and green tea (preferably as part of the traditional, meticulous tea ceremony). But the land of the rising sun, which since the mid 20th century has displayed a knack for taking Western inventions and doing them much better than we ever did, is also a haven for whisky lovers—rivaling even Scotland for the production of single malts. One of the oldest of Japanese whiskies and the first to be distilled in the country, Yamazaki Whisky is produced just south-west of Kyoto, at a spot where the Katsura, Uji and Kizu tributaries join the Yodo River.”

The first distillery to operate legally in New York state since prohibition, Tuthilltown Spirits has already created a good buzz for itself in “foodie” circles. The aged spirit offerings include the “Government Warning Rye,” made of whole rye and distilled to 92 proof. The “Hudson Bay Bourbon” is the first bourbon ever made in New York, and the “Hudson River Rye” is specially concocted to mix the perfect Manhattan. Several other whiskey’s round out the aged spirit line, including a rum, and there is also a collection of unaged spirits (vodka and corn whiskey) available.

Notcot points us at the Hickoree’s Hard Goods Store where we discover this identifiable “#006 ‘Whiskey’ Eau de Toilette” fragrance for men. As they put it,  ”It is not a scent for every man – this is a powerfully masculine scent. Elegance, strength, and charisma describe this fragrance . . . a deep woodsy and amber fragrance with a surprising hint of spice that reveals itself over the hours . . . notes include vetiver, labdanum, vanilla, woods and fruit.” We love the packaging as well.

Founded in 1783 by Welsh Born Evan Williams, the Evan Williams brand is notable for being Kentucky’s first distiller. Williams moved to the area while it was still officially part of Virginia, in 1780, and became an integral member of the local political scene. He was an early member of the board of trustees of Louisville and later served as Harbor Master for the City (which is located on the Ohio River.

For us, the most important part of Williams’ life history is the discovery that converting excess corn and grain into whiskey would avoid waste. The small distillery he set up on 5th Street in Lousiville has grown exponentially, now bottles labeled Evan Williams are the 2nd most purchased Kentucky Straight Bourbon Whiskey in the United States.

History has been a part of the Evan Williams identity for some time. Searching through the company website recently, I was tickled by the “What Evan Williams did for Bourbon” campaign of the 1970s. Linking the Welshman to other (perhaps more important) inventors, the advertisements employ a really winning method of heritage construction. Can’t help but think a similar approach would be welcome today.

I love whiskey as much as I love Miller High Life, though the combination of the two is disastrous, I may add. Today, Notcot made me pull the snuffer off the shelf in preparation for the newest premium grade whiskey to hit the shelves and this time it’s from Beam. “Bottled at 92 proof, (rī)1 features a light, slightly spicy flavor and a long, luxurious finish. Straight, the nose offers a gentle, peppery nod to its rye heritage. Cut with water, the scents of dried fruit and cinnamon push to the front, providing a rich palate experience.” Bring it on.
